L\u2019id\u00e9e de base fut d\u2019accueillir un troupeau de ch\u00e8vres en ce lieu tr\u00e8s escarp\u00e9, afin d\u2019entretenir en partie les 110 ha de bois que compte le domaine. Le choix s\u2019est port\u00e9 rapidement sur la race \u00ab Rove \u00bb du nom du village voisin de Marseille sur la C\u00f4te bleue o\u00f9 elle s\u2019est d\u00e9velopp\u00e9e et y est bien connue pour son aptitude \u00e0 vivre en terroirs arides. Rencontre avec Angel, fromager en Espagne venu faire une exp\u00e9rience de vendanges au Vieux T\u00e9l\u00e9graphe, remise en \u00e9tat de l\u2019ancienne bergerie, accueil des premi\u00e8res pensionnaires, naissance de la g\u00e9n\u00e9ration 2, cr\u00e9ation de la fromagerie aux normes europ\u00e9ennes et arriv\u00e9e des premiers fromages avec la s\u00e9rie d\u2019exp\u00e9riences n\u00e9cessaires pour aboutir \u00e0 la boule de Palli\u00e8res, sur laquelle notre choix s\u2019est arr\u00eat\u00e9. C\u2019est en quelques mots les diff\u00e9rentes \u00e9tapes qui se sont succ\u00e9d\u00e9es pour en arriver \u00e0 la g\u00e9n\u00e9ration 3 de Rove, portant le troupeau \u00e0 32 t\u00eates et la mise en place d\u2019une petite production de boules de Palli\u00e8res commercialis\u00e9e localement, en ce printemps 2015. Rencontres, exp\u00e9riences et apprentissage, respect des cycles de la nature, naissance d\u2019un vrai go\u00fbt.
